The cuisine is the pride and joy of the Staccoli family, who personally take care of the dishes and offer all the tastes and traditions of our region Romagna. Every day a choice of two menus with home-made pasta, fresh fish from the Adriatic, mouth-watering meat dishes such as the magnificent “coniglio in porchetta” (rabbit and pork) and the “mixed roast”, two of the most popular second courses with our guests; piadina, home made sweets, and at breakfast cakes and pastries prepared by the same “mamma Staccoli”, Mrs. Maria Grazia.
We pay special attention to the cuisine for sports enthusiasts, with a healthy, authentic and energy-based diet, picnic breakfasts, snacks and morsels after training with flexible eating hours.
Local produce
Discover the tastes and typical products of Romagna. The inland regions of Romagna are rich in wine cellars, mills to visit all year round where visitors can purchase Romagna DOC wines directly, as well as extra virgin olive oil or flour.
Wine
The two Romagna wines most common nationally, come from the vines Sangiovese and Trebbiano, while another three (Albana, Pagadebit and Cagnina) are more specific to the area in the province of Forlì-Cesena. All available at the large number of wine bars and vineyards, such as those associated with the Road of Tastes and Wine, open to tourists with tasting opportunities on occasion of the national event “Open cellars” held in May in Romagna.
Extra-virgin olive oil
Highly prestigious oil, with the renowned tastes and smells, produced by the olive groves in the hills of the provinces of Forlì-Cesena and Rimini. This product recently obtained the status of Denominazione di Origine Protetta (D.O.P.) (Registered Designation of Origin) “Hills of Romagna”. The Hills of Forlì and Cesena, the area between Roncofreddo, Montiano, Longiano and Borghi, is the ideal location for a significant production of top quality oil; other renowned areas are the higher plains of Modigliana and Forlì, Forlimpopoli, Bertinoro, Cesena and Savignano.
Purchased in the farms and farmhouse hotels in the area, such as those associated with the product the Road of Tastes and Wine.
Flour
Of the numerous mills scattered around the inland regions of Romagna, many now abandoned, a few still continue their work, producing organic wheat and cereal flour. Organic flour can still be purchased today at the mill “Da Sbrulein – La valle della Riserva” in the area of Onferno near the park Parco delle Grotte.

The mill Mulino Rossi also worth a visit, again in the municipality of Gemmano.
Mulino Rossi
Located at approx. 2 Km from Gemmano-cap. in the district of Zollara; the building complex, including the mill and house. was built in 1929 by the Rossi family and is still owned by them. This is a low-grinding stone mill powered electrically, to produce natural flour rich in fibre.
